Method to prepare

  1. Mix milk, flour, and lemon juice in a bowl.
  2. Cover the mixture and leave it for 7 hours.
  3. Take a baking bowl and grease it with butter or oil.
  4. Heat the microwave oven to 350 degrees.
  5. Now add cinnamon, tapioca flour, sugar, and fruits to a bowl and mix.
  6. Pour the above mixture into the baking pan, already greased.
  7. Bake it for 10 to 15 minutes.

  9. Beat the egg in a bowl.
  10. Now add baking soda and ½ cup sugar to it.

Carrot dosa is a perfect dish for the kids, especially as it adds sweetness to the dosa, and the bright orange colour appeals to the eye.

 

It is a healthy dish suitable for people of all age groups.

It is accompanied by Sambaar, tomato chutney, green chutney, mint and onion chutney, coconut chutney, and so on.

Dosa is normally prepared in various ways across various South Indian homes.

It is often experimented with new twists.

It can be made with tomatoes, onions, carrots, etc.

Ingredients (for the batter):

1 cup carrots (grated)

  • 2 tsp finely chopped green chillies
  • 1 cup rice flour (chawal ka aata) (optional)
  • Pinch of bicarbonate soda
  • 1 cup raw rice
  • 1/4 cup Parboiled rice
  • 5 tbsp fresh yoghurt (curd)
  • 1/2 cup coconut (grated)
  • 2 tsp sugar
  • Water – about 2 cups
  • Salt to taste
  • Oil for greasing & cooking

Method of Preparation of Carrot Dosa 

  1. Mix all the above-mentioned ingredients along with 1¾ cups of water in a large bowl and mix well. A batter of pouring consistency should be made.
  2. Dilute the batter with water if it is required. Sometimes the batter is too thick, and the dosa might become hard and rough in texture because of that
  3. Make sure to keep the consistency of the dosa balanced.
  4. Heat a tava or a non-stick pan (griddle) and
  5. Slightly grease it by using a little oil.
  6. Pour a ladleful of the batter on the tava (griddle) and spread the batter to make a 120 mm diameter circle.
  7. Now, cook the dosa with a little bit of oil on a medium flame until it turns golden on both sides.
  8. Repeat steps 2 to 4 and make 11 more dosas or more if you wish to.
  9. Serve hot with sambhar, tomato chutney, green chutney, mint and onion chutney, and coconut chutney; any of these that you wish to or all of these chutneys if you want.
  10. Nicely plate them and serve these chutneys in small bowls and keep them on the plate.

 

NOTE:

Sometimes the tava, or the pan used for making dosa will not cooperate since it is also used for making other dishes such as roti.

So it is suggested to use a half-cut onion and a little oil to prepare the pan.

Heat the pan. Pour 1 tsp of oil onto the sides of the pan, rub it well with onion, and then pour the batter of the dosa.

The dosa will not stick to the pan and will come off with ease.

Simple & Easy Butter Chicken Recipe

Butter chicken recipe is basically a north Indian dish, which is a popular dish in all Indian restaurant menus.

It’s a creamy tandoori dish that is traditionally cooked with butter and chicken.

Butter chicken is boneless chicken cooked in a tandoor and finished with aromatic Indian spices and cream.

It is said that its origin is from the state of Punjab.

It is normally served for dinner, and it can be served with hot Indian bread, Chapatti, Butter Garlic Naan, and it goes well with fried rice too.

Ingredients for Simple & Easy Butter Chicken Recipe

For the marinade:

  • 1 kg boneless chicken pieces
  • 2 tsp red chili powder
  • ¼ tsp turmeric powder
  • 2 tsp lemon juice
  • Salt to taste
  • Oil 3-4 tbsp (for frying)

 

For Gravy:

  • Onion  2, big (finely sliced)
  • Ginger-garlic: 2 tsp (Chopped)
  • Cinnamon, a small piece
  • Red chili powder 2 tsp
  • Tomato (big size) 3
  • Cashew 15 to 20 (boil it in water and leave for 5 to 10 minutes)
  • Yogurt 2 tbsp
  • Ginger garlic paste ½ tsp
  • Chili powder ½ tsp
  • Water ¾ cup
  • Kasuri Methi 1 tsp
  • Coriander leaves  2 tsp
  • Fresh cream: 2 tbsp
  • Butter: 3 to 4 tbsp
  • Oil 3 tbsp
  • Salt to taste

Method for Simple & Easy Butter Chicken Recipe

For the marinade:

  • Marinate the chicken pieces with the ingredients given above for the marinade
  • Heat the oil in a pan and fry the marinated chicken for about 10 minutes on low heat
  • Keep it aside.

For Gravy:

  • Heat oil in a pan, add onion, and saute till it’s soft and turns light brown.
  • To this, add crushed ginger and garlic and saute till the raw smell disappears.
  • Add cinnamon and saute for about two minutes.
  • To this, add 2 tsp chilli powder and saute till the raw smell disappears and the oil appears on the top.
  • Once cooked, remove from the flame and let it cool down for a few minutes.
  • Take this cooked onion, add boiled tomatoes, soaked cashews, and yoghurt in a food processor, and grind it to a fine paste.
  • Heat butter in a pan. Add ½ tsp ginger-garlic paste and saute for a few minutes, and then add 1 tsp red chilli powder and saute for a few more seconds.
  • Add the ground paste and bring it to a Add ¾ cup of water and let it cook for a few seconds, then when it starts to boil, add the fried chicken and add some dry Kasuri Methi and cook on a low flame.
  • Once cooked, add the coriander leaves and fresh cream, mix well, and remove from the flame.
  • Serve hot with garlic naan or ghee rice.

 

Note:

Cut the chicken into cubes; you can marinate the chicken overnight for more flavour.

For better and tastier butter chicken, boil tomatoes in water without cutting and removing the skin, but just place the tomatoes at the bottom because it will make it easy for us to remove the skin after boiling.

You can soak cashews in water for half an hour instead of boiling them in water.

Use Amul butter and Amul fresh cream for moist, healthy butter chicken.

Cook on a medium flame.

It is accompanied by a hot cup of tea, tamarind chutney, saunth chutney, or lightly sweetened curd.

Ingredients for Dahi Vada Recipe

For Vada:

  • Urad Dal (Split black lentils) ½ cup
  • Green chillies tsp (roughly chopped)
  • Ginger (Adrak): 2 tsp chopped
  • Salt to taste
  • Water ¼ cup

For the topping:

  • Curd: 1 ½ cups
  • Sugar: 1 ½ cups
  • Chilli powder, a pinch for sprinkling
  • (Khajur Imli Ki chutney) 2 tbsp
  • Cumin seeds (jeera), a pinch for sprinkling
  • Black salt, a pinch for sprinkling
  • Coriander (dhalchinia) 1 tbsp (finely chopped)

Method for Dahi Vada Recipe

For the Vada:

  • First, soak the urad dal for two hours.
  • Once it is soaked, drain it and keep it aside.
  • Now take a bowl and combine urad dal, green chillies, and salt and mix well.
  • In a food processor, pour these combined ingredients and grind to a smooth paste using ¼ cup of water.
  • Pour the smooth paste into a bowl and divide the batter into six equal portions and keep them aside.
  • Take a deep non-stick pan and pour oil, then let it heat on a medium flame
  • Now deep-fry three Vadas at a time and let them cook till they turn light golden brown.
  • After a few minutes, check if its colour has turned to a light brown from all sides; cook it on a medium flame and don’t let it burn.
  • Once cooked, remove it and drain it on tissue paper. Keep it aside.

Procedure for the Dahi

  • Take a bowl and whisk the curd well.
  • To this, add powdered sugar, and then sprinkle some chilli powder.
  • The Daihi mixer is ready.
  • Keep this sweetened curd aside.

Procedure for Easy Dahi Vada

  • Take enough water in a deep bowl and soak the vada in it for about 15 to 20 minutes.
  • Now take out the vada from the water and squeeze out all the excess water from the vada and flatten it lightly between your palms.
  • Take a serving plate and place three on it, and top it with the sweetened curd mixture.
  • Now sprinkle some chilli powder.
  • Then pour 1 tbsp of Imli ki chutney and sprinkle a few cumin seeds and black salt.
  • Garnish with finely chopped coriander.
  • Repeat this step for 3 to 4 servings.
  • Serve immediately.

 

Note:

Soak urad dal overnight for a better result.

While grinding the dal, use less water or no water.

Whisk the dal till it gets fluffy, or take the dal on a plate and mix it with your hands.

Soak vadas in water with salt and asafetida if you wish to serve them immediately.

Ingredients for making Healthy Onion Dosa Recipe

Split black gram lentil or urad ki dal, 1 cup

Potato 400 gms

Onion 200 gms

Fenugreek seeds 1 tsp

Mustard seeds 1 tsp

Red chilli powder ½ tsp

Turmeric powder ¼ tsp

Salt 1 1/2

Oil: 2 tbsp

Curry leaves  12-14

Procedure to make a healthy onion dosa

  • First, you will have to soak rice, fenugreek seeds, and the split black gram for 6 hours.
  • Then grind the ingredients that you had soaked into a fine batter. Leave it for fermentation.
  • Keep in a warm place for fermenting. You can keep it in the kitchen only. You can add salt to it.

 

Stuffing for the onion dosa

  • Chop the onions and keep them aside. Peel the potatoes and cut them into small pieces.
  • Take a pan and heat some oil in it. Once the oil becomes hot, add mustard seeds and curry leaves and let them splutter.
  • Then add the chopped onions. Sauté it until it is golden brown in colour. Add the potatoes, chilli powder, turmeric powder, and salt.
  • Mix it well and saute for another two minutes. Then take it off the stove and keep it aside.

Making the onion dosa

  • Use a nonstick pan (tava) for a crispy, thin dosa. Heat the tava and use one tbsp of batter and spread it on the tava in circular movements.
  • Leave it for a minute to cook. Then use one tbsp of the stuffing or the onion mixture and spread it all over the dosa.
  • Now, slowly roll the dosa, and for this, you can use a few drops of oil too. One can serve it hot with chutney or sambar.
  • Remember that while making every dosa, wipe the tava with a cloth and sprinkle some water on it.
  • This will make the dosa crisp, and it will not stick to the tava while you remove it.

  • Soak the black gram in water for 3 to 4 hours.
  • Soak the idli rava in a separate bowl for around one hour before mixing with the black gram batter.

  • Squeeze out the excess water from the idli rava and add it to the black gram batter.

Most people in Tibet and northeastern India can’t afford to purchase alcohol; however, they can easily make rice beer on their own since they grow their rice, and it is even good for their health.

 

Generally, in Tibet, rice beer is called chang and made from barley, whereas in exile, where barley is not common, other grains are used.

In Tibetan communities in India, people use rice or millet. A few areas of Arunachal Pradesh that are close to Tibet also use barley.
 

How to Make a Rice Beer Recipe at Home Easily?

Ingredients used to prepare the rice beer recipe

  • Jasmine rice, 5 cups (except basmati; any white rice is okay)
  • The normal quantity of water you would use to cook rice.
  • 1 full tablespoon of dry yeast (pab or chanzi).

  1. Grind sufficient yeast for 1 full tablespoon into a fine powder.
     
  2. Normally, cook rice as you would do. Use a rice cooker with 5 cups of jasmine rice & water filled to the 5-cup line.
     
  3. Once the rice is cooked, stir it around in the rice cooker or pot it is cooked in. You would like to sort of loosen & fluff the rice up—you do not want it packed, packed, lumpy.
     
  4. Spread rice onto a very clean working surface to let it cool. Work through the rice when it cools sufficiently to touch, loosening up clumpy bits.
     
  5. You would like to cool the rice so that there is a little bit of heat left – really not very warm at all, sort of a lukewarm temperature.
     
  6. If rice is too hot when you add yeast, you get a sour taste.
     
  7. If rice is too cold, it takes longer to ferment, which is fine if you have time.
     
  8. Spray ground-up yeast over the rice, and then blend it in very well with clean hands.
     
  9. Pour the mixture of rice into a prepared container.
     
  10. Cover it with a lid.
     
  11. Swaddle it like a baby in a couple of warm blankets.


Fermentation Of Rice Beer Recipe 

For 4-5 days, leave it in a warm place. In the meantime, do not open it.

It will be ready when it starts to smell strongly of fermentation, or after 7 days, open it up.

The main method you will be able to tell it is ready to consume is that it smells like it has fermented, a bit like an alcoholic.

Once the rice beer is done, transfer it to another clean container, add around 3 cups of water, and then put it in the refrigerator.

It’s up to you how much water you want to add to make your rice beer stronger or weaker.

Although the rice beer is already fermented, wait for 24 hours or so after you add the water before you start drinking it.

Keep this rice beer mixture in the fridge for a while, perhaps months, or even longer.
 

How to drink the rice beer?

Rice beer can be drunk in two ways: One way is to strain out rice pieces & drink the thin, milky liquid. Another way to drink rice beer is to keep the rice and blend the contents of a container, as is, with some khapse (one type of Tibetan pastry), sugar, dried cheese, and butter, and ll consume it.
